Making jams, chutneys, pickles and preserves is a way of turning surplus vegetables into homemade goods, and saving on expensive store-bought alternatives. If you want to go old school, do not put lids on your jars: cut slightly cardboard circle to fit the the top jar perfectly and covers with wax paper or colorful plastic wrapping; tie with raffia or brown lightly string. Ensure you tie it very tightly for the jar neck. When any air gets in following your jars are sterilized, the preserves could easily get moldy.
